Cara Martinez is the innovative entrepreneur behind Sugar Coma,
a local dessert business reimagining jelly in the most eye-catching way.

After 15 years as a pastry chef, Cara discovered the wonderful world of gelatine art and spent over a year experimenting with recipes and techniques to make it market-ready.

Her jelly domes—often mistaken for snow globes—feature playful designs and come in fun flavours like bubble gum, cookies and cream, and even cocktail-inspired versions for adults. She also creates pet-friendly jellies using safe, healthy ingredients.

Cara wanted to move beyond the bland jelly of childhood and hospitals, blending elements of mousse and panna cotta to create something fresh and indulgent. Texture skeptics are often surprised—and converted—after one bite.

You’ll find Sugar Coma at Caloundra Chamber markets and major events. With custom orders for birthdays and hens’ parties, her jellies are as versatile and unique as they are delicious.
